Better known for films than fodder, Cannes nevertheless will become the epicentre of Epicureanism this New Year.
Cannes Cooking is a major gourmet conference and rendezvous for the most established and up-and-coming chefs from the world of haute cuisine, and an opportunity to see and meet some of the most innovative names in the business.
Among the distinguished international guests will be
Kunio Tokuoka from Japan, who with four Michelin stars (three for his restaurant Kitcho Kyoto and one for Osaka) is the undisputed master of
kaiseki cuisine. This highly specialized form of gastronomy resembles a marathon ritual ceremony, leading the diner from sakizuke (amuse-bouche) to mizumono (seasonal dessert), via a range of soup, fish and meat dishes.
Also from the Far East comes the colourful
Alvin Leung Jr, winner of two Michelin stars for his 'Bo Innovation' restaurant in Hong Kong. The self-taught, cigar-smoking 'demon chef' is a fierce advocate of cooking which fuses modern techniques with traditional menus, and his hope is to expand into his native London at the first opportunity.

Anatoly Komm can lay claim to the title of the Russian Heston Blumenthal. Born in Moscow in 1967, chef Komm trained as a geophysicist before entering the world of high cuisine. His scientific background has led him to develop the art of 'molecular cooking', his own modern interpretation of the Russian menu. As well as the holder of a Michelin star, he was the winner of the Alba White Truffle Award in 2008; and in 2010, his restaurant Varvary made it into San Pellegrino's top hundred.
Closer to home, two top chefs to watch are
Geir Skeie (left) winner of the Bocuse d'Or 2010, who at 28 opened his new restaurant last month in his native Norway. And Korean-born Sang Hoon Degeimbre, whose 'Air du Temps' in Belgium continues to make new fans each day.
